Whisk together rice flour and coconut oil for easy gluten-free crepes. Chill batter for an hour before brunch.
Ingredients:
  • 1 cup rice flour
  • 3 large eggs
  • 0.5 cup almond milk
  • 3 tablespoons white sugar
  • 1 cup warm water
  • 3.5 tablespoons coconut oil, divided
Instructions:
  • Combine rice flour, eggs, almond milk, sugar, and salt in a large bowl and whisk until thoroughly combined.
  • In a separate bowl, blend water and 3 tablespoons of coconut oil. Whisk this mixture into the flour until well combined. Strain the batter through a sieve into a clean bowl, cover with plastic wrap, and refrigerate for 1 hour.
  • In a heated griddle with coconut oil, ladle a portion of the batter, spreading it out. Cook each side for about 30 seconds until set. Repeat with the rest of the batter.
