Make this party favorite gluten-free, no magic required!
Ingredients:
  • 125g unsalted butter, softened
  • 161.25 gm caster sugar
  • 2 eggs
  • 187.50 gm gluten-free self-raising flour
  • 32.50 gm gluten-free custard powder
  • 195.00 gm buttermilk
  • 62.50 ml gluten-free hundreds and thousands (see Notes)
  • 50g unsalted butter, chopped
  • 175g gluten-free milk chocolate melts
  • 225.00 gm pure icing sugar, sifted
  • 20.00 gm Cocoa Powder
  • 64.38 gm milk
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Grease a 1.5cm-deep, 26cm x 38cm baking tray, then line the base and sides with baking paper, leaving a 2cm overhang.
  • With an electric mixer, whip together butter and sugar until they are light and fluffy. Mix in vanilla until well combined. Add eggs one at a time, beating until just combined. Sift flour and custard powder over the butter mixture, then add buttermilk. Stir until smooth and fully combined.
  • Transfer the mixture into the prepared pan, using a spatula to spread it evenly. Bake for 15 minutes or until a skewer inserted into the center comes out clean and the top bounces back to the touch. Let it cool in the pan for 5 minutes, then carefully flip it onto a wire rack to cool completely.
  • Prepare the Chocolate icing by combining butter and chocolate in a saucepan over low heat. Stir until melted and smooth, approximately 2 minutes. Add icing sugar, cocoa, and milk. Stir until the mixture is smooth. Remove from heat and let it sit for 10 minutes to slightly thicken. Spread the icing evenly over the cooled slice, sprinkle with hundreds and thousands, then let it set for 30 minutes.
  • Cut the slice into 16 equal triangles and serve.
