Zesty lime juice and Key lime yogurt create a tangy, gluten-free pie with a refreshing twist!
Ingredients:
  • 1 cup Bisquick™ Gluten Free mix
  • 5 tablespoons cold butter
  • 3 tablespoons water
  • 2 tablespoons cold water
  • 1 tablespoon fresh lime juice
  • 1 1/2 teaspoons unflavored gelatin
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 3 containers (6 oz each) Yoplait® Light Thick & Creamy Key lime pie yogurt
  • 1/2 cup Cool Whip frozen whipped topping, thawed
  • 2 teaspoons grated lime peel
  • Whipped topping, if desired
  • Grated lime peel, if desired
Instructions:
  • Preheat oven to 425°F. Grease a 9-inch glass pie plate with shortening or cooking spray. In a medium bowl, combine Bisquick mix and butter using a pastry blender, fork, or two knives until the mixture resembles fine crumbs. Add water and mix until a dough ball forms. Press the dough into the bottom and up the sides of the pie plate.
  • Bake for 10 to 12 minutes until lightly golden brown, then allow to cool completely for about 30 minutes.
  • Combine cold water and lime juice in a saucepan. Sprinkle gelatin over the mixture and let sit for 1 minute. Warm over low heat, stirring constantly, until gelatin dissolves. Let cool slightly for about 2 minutes.
  • In a medium bowl, use an electric mixer to blend cream cheese until smooth. Mix in the yogurt and lime juice until well combined on low speed.
  • Gently mix in whipped topping and lime zest. Transfer mixture to crust and chill until firm, approximately 2 hours. Top with more whipped topping and lime zest before serving. Store any leftover pie in the refrigerator, covered.
