Gluten-Free Key West Fruit Salad

Wholesome salad recipe - ideal for large gatherings and special occasions.
Ingredients:
  • 3/4 cup sugar
  • 1/4 cup water
  • 1/4 cup fresh or bottled Key lime juice or regular lime juice
  • 2 to 3 tablespoons tequila or Key lime juice
  • 1 teaspoon grated Key lime or regular lime peel
  • 14 cups cut-up fresh fruit (pineapple, strawberries, kiwifruit, grapes)
Instructions:
  • In a small saucepan, bring sugar and water to a boil, then simmer for 2 minutes, stirring constantly until sugar is dissolved. Remove from heat and stir in lime juice and tequila.
  • Allow the lime dressing to reach room temperature, then cover and refrigerate for about 2 hours until chilled.
  • Mix lime zest into the dressing. Gently combine fruit and dressing in a large bowl. Serve right away.
