Indulge in a delicious gluten-free peach crumble featuring fresh, juicy summer peaches.
Ingredients:
  • 6 cups peeled, sliced fresh peaches
  • 0.25 cup packed brown sugar
  • 3 tablespoons gluten-free all purpose baking flour (such as Pillsbury™)
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 0.5 teaspoon grated lemon zest
  • 1 cup gluten-free all purpose baking flour (such as Pillsbury™)
  • 1 cup white sugar
  • 0.25 teaspoon nutmeg
  • 1 egg, beaten
  • 0.5 cup melted coconut butter
Instructions:
  • Preheat the oven to 375°F (190°C) and grease an 11x7-inch baking dish.
  • Add the sliced peaches to the baking dish. Combine brown sugar, flour, cinnamon, lemon juice, and lemon zest in a small bowl, then sprinkle over the peaches.
  • Combine flour, sugar, baking powder, salt, and nutmeg in a medium bowl. Add egg and mix until mixture is crumbly. Sprinkle over peaches and drizzle with melted coconut butter.
  • Bake until peach juices bubble and topping is golden brown, about 38 minutes in the preheated oven.
