Delicious gnocchi with sweet pea puree and crispy grilled bacon.
Ingredients:
  • 83.33 gm cream
  • 40g butter
  • 375.00 ml frozen mint peas
  • 1 clove garlic, crushed
  • 625g gnocchi
  • 120.00 gm fresh ricotta cheese, crumbled
  • 175g crispy bacon, ultra thin, grilled
  • Mint leaves, to serve
Instructions:
  • Boil gnocchi in a large pot of water until they float to the surface, about 2 minutes. Then, drain the gnocchi.
  • In a small saucepan, gently simmer cream and butter. Stir in peas, garlic, salt, and pepper. Cook for 5 minutes until peas are tender. Let it cool slightly. Blend pea mixture with 1/2 cup of water until smooth.
  • Divide pea puree among serving bowls, saving some for topping. Add gnocchi to each bowl, drizzle with reserved puree, and sprinkle with ricotta cheese. Finish with a slice of bacon and a few mint leaves before serving immediately.
