Golden Fruit Chutney

Tangy fruit chutney with spices - ideal for grilled meats.
Ingredients:
  • 1 cup golden raisins
  • 3/4 cup pineapple or apple juice
  • 1/2 cup cider vinegar
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground mustard
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 can (20 ounces) pineapple chunks in juice or syrup, undrained
  • 2 packages (6 ounces each) dried apricots, coarsely chopped (2 cups)
Instructions:
  • In a 3-quart saucepan or 4-quart Dutch oven, bring all ingredients to a boil, stirring occasionally. Lower the heat, cover, and simmer for 30 minutes.
  • Simmer uncovered for approximately 15 minutes, stirring occasionally until the mixture is thickened. Allow to cool for about 2 hours. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 2 months.
