Versatile and delicious Gougere perfect any time of day.
Ingredients:
  • 125g tasty cheddar
  • 250.00 gm water
  • 125g unsalted butter, chopped
  • 250.00 ml plain flour, sifted
  • 0.60 gm salt
  • 4 eggs, plus extra beaten egg to brush
  • 123.75 gm whole-egg mayonnaise
  • 11.80 gm Brand dijon mustard
  • 1 small Brand hot roast chicken, skin and bones removed, meat shredded
  • 4 celery stalks, thinly sliced lengthways, reserve leaves
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and prepare 2 baking trays with greased and lined baking paper. Draw four 10cm discs on each tray, then flip the paper over. Grate half of the cheddar and chop the rest.
  • In a saucepan, combine water, butter, and season generously. Bring to a boil, then add flour and salt. Stir quickly with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Let it cool slightly before transferring to a bowl. Use an electric mixer to blend the dough thoroughly. Gradually add eggs, beating well after each addition. Gently fold in grated cheddar.
  • Pipe the mixture onto each disc in three layers using a 1cm plain nozzle piping bag. Brush with extra egg, press chopped cheddar onto the dough, then bake for 25-30 mins until puffed and golden. Cool on the trays.
  • In a bowl, mix together the mayonnaise and mustard, season with salt and pepper, then fold in the shredded chicken, sliced celery, and reserved celery leaves.
  • Split each deliciously golden-brown gougere in half. Generously spoon the delectable filling over the bottom half and top with the other half to create a mouthwatering sandwich of flavors.
