Elevate your chicken sandwich with gourmet ingredients for a fresh twist.
Ingredients:
  • 6 (about 800g) desiree potatoes, unpeeled, cut into wedges
  • 45.50 gm olive oil
  • Salt & freshly ground black pepper
  • 4 small (about 170g each) single chicken breast fillets
  • 2 x 300g bought garlic focaccia, halved, split
  • 2 ripe vine-ripened tomatoes, thinly sliced
  • 2 ripe avocados, halved, stones removed, peeled, thinly sliced
  • 200g bought marinated chargrilled red capsicum, drained on paper towel
  • 4 slices prosciutto
  • 1 x 100g ctn aioli (Neil Perry Fresh brand)
Instructions:
  • 1. Preheat your oven to 220°C. Line a baking tray with non-stick baking paper. 2. In a large bowl, toss the potato wedges with 1 1/2 tablespoons of oil until coated. Season with salt and pepper. 3. Arrange the seasoned potato wedges in a single layer on the prepared tray. 4. Bake in the preheated oven for 35-40 minutes until they are golden brown and tender. 5. Remove from the oven and enjoy your delicious crispy potato wedges!
  • Preheat a barbecue or chargrill on high heat. Tenderize the chicken by pounding it between 2 pieces of plastic wrap until it's 5mm thick. Brush with oil and season with salt and pepper.
  • Adjust the barbecue or chargrill to medium heat. Place the focaccia on the grill and cook for 1-2 minutes per side until toasted. Transfer to a plate. Then, grill the chicken for 2-3 minutes per side until golden brown and fully cooked. Transfer to a plate.
  • On serving plates, layer the focaccia bases with rocket leaves, tomato, avocado, capsicum, chicken, and prosciutto. Drizzle with aioli and place the remaining focaccia on top. Serve promptly with potato wedges.
