Graham-Crusted Tilapia

Try this speedy and tasty tilapia coated in graham crackers from a top cookbook. Ready in 25 minutes!
Ingredients:
  • 1 lb tilapia, cod, haddock or other medium-firm fish fillets, about 3/4 inch thick
  • 1/2 cup graham cracker crumbs (about 8 squares)
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup fat-free (skim) milk
  • 2 tablespoons canola oil
  • 2 tablespoons chopped toasted pecans
Instructions:
  • Preheat the oven to 500°F with the rack positioned just above the middle.
  • Cut the fish fillets into 2-inch-wide pieces. Combine cracker crumbs, lemon peel, salt, and pepper in a shallow dish. Pour milk into another shallow dish.
  • Soak the fish in milk until coated, then cover with cracker mixture. Transfer to an ungreased 13x9-inch pan, drizzle with oil, and sprinkle with pecans.
  • Bake for approximately 10 minutes, or until the fish easily flakes with a fork.
