Chef John's Grand Marnier Soufflé: Impressive, elegant, and airy dessert for two, infused with orange liqueur.
Ingredients:
  • 1 tablespoon butter, melted
  • 5 tablespoons white sugar, divided
  • 5 teaspoons butter
  • 5 teaspoons all-purpose flour
  • 0.25 cup cold milk
  • 1 tablespoon brandy-based orange liqueur (such as Grand Marnier®)
  • 1 teaspoon freshly grated orange zest
  • 2 large egg yolks
  • 0.125 teaspoon vanilla extract
  • 2 large egg whites
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C). Next, coat the insides of two 8-ounce ramekins with a luxurious tablespoon of melted butter and a sprinkle of sugar. Finally, place them on a baking sheet lined with aluminum foil for easy cleanup.
  • In a saucepan over medium-low heat, melt 5 teaspoons of butter until fragrant, about 2 minutes. Stir in flour and cook until golden brown. Pour in milk and stir until thick, about 3 to 4 minutes. Transfer to a large bowl and add orange liqueur, zest, egg yolks, and vanilla. Mix until smooth.
  • In a separate large bowl, whisk egg whites until frothy. Gradually add 2 tablespoons sugar and whisk until mixed. Then, add the remaining 2 tablespoons sugar and keep whisking until the meringue is thick and holds its shape without being stiff.
  • Gently incorporate half of the fluffy meringue into the egg yolk mixture until evenly combined. Next, delicately fold in the rest of the meringue until fully incorporated. Spoon the mixture into the ramekins, leaving a 1/4-inch space at the top.
  • Bake in the preheated oven for about 16 minutes until beautifully risen and golden brown.
