Greek Chicken Burgers with Tzatziki Sauce

Elevate your chicken-spinach burger with Mediterranean flair - serve in a pita with cucumber and tangy tzatziki, ready in just 30 minutes!
Ingredients:
  • 1 medium peeled or unpeeled cucumber
  • 1/2 cup plain Greek yogurt (from 6-oz container)
  • 2 tablespoons chopped onion
  • 2 teaspoons chopped fresh mint
  • 1 lb lean ground chicken
  • 1 cup chopped fresh spinach
  • 1/4 cup chopped pitted kalamata olives
  • 1 tablespoon cornstarch
  • 1 tablespoon chopped fresh oregano leaves
  • 2 cloves garlic, chopped
  • 1/4 teaspoon pepper
  • 2 whole-grain pita breads (6 inch), cut in half to form pockets
  • 1/2 cup chopped fresh tomato
Instructions:
  • Preheat oven to broil. Chop enough cucumber to make 1/2 cup; place in a small bowl (reserve 8 slices from the rest of the cucumber for sandwiches). Mix in the rest of the sauce ingredients and chill until needed.
  • Combine chicken, spinach, olives, cornstarch, oregano, garlic, salt, and pepper in a large bowl. Form mixture into 4 oval patties, each approximately 1/2 inch thick. Place patties on a broiler pan and broil for 10-12 minutes, turning once, until a meat thermometer reads at least 165°F when inserted into the center of the burgers.
  • Fill pita pockets with burgers. Top each burger with tomato, cucumbers, and drizzle with 3 tablespoons of sauce before serving.
