Bold flavors of sun dried tomatoes, spinach, and Kalamata olives top this flavorful pizza.
Ingredients:
  • 4 cloves garlic, minced
  • 1 cup crumbled feta cheese, divided
  • 1 (12 inch) pre-baked Italian pizza crust
  • 0.5 cup oil-packed sun-dried tomatoes, coarsely chopped
  • 1 tablespoon oil from the sun-dried tomatoes
  • 0.25 cup pitted kalamata olives, coarsely chopped
  • 1 teaspoon dried oregano
  • 2 cups baby spinach leaves
  • 0.5 small red onion, halved and thinly sliced
Instructions:
  • Preheat oven to 450 degrees and position rack at the lowest level. Combine mayonnaise, garlic, and 1/2 cup feta in a small bowl. Spread the mixture over the pizza crust on a baking sheet, then sprinkle with tomatoes, olives, and oregano. Bake for approximately 10 minutes until hot and crispy.
  • Combine spinach and onion with flavorful sun-dried tomato oil. Spread the spinach mixture and the rest of the feta cheese over the hot pizza. Bake until the cheese is melted, for approximately 2 minutes. Cut the pizza into 6 slices and enjoy!
