Greek-style pork tenderloin with zesty marinade of olive oil, garlic, lime juice, and oregano for tender and flavorful results.
Ingredients:
  • 1.5 cups fresh lime juice
  • 0.75 cup olive oil
  • 6 cloves garlic, sliced
  • 2 teaspoons salt
  • 6 tablespoons dried oregano
  • 2 (1 pound) pork tenderloins
Instructions:
  • In a large resealable plastic bag, mix lime juice, olive oil, garlic, salt, and oregano. Shake the bag until well combined. Adjust the marinade to your taste: add more oil if too tart or more lime juice for extra zing. Ensure the garlic and salt flavors are present but not overwhelming. Add the tenderloins to the bag, coat them by turning, and seal. Refrigerate and let marinate for 2 to 5 hours.
  • Remove the tenderloins from the marinade, allowing any excess to drip off, and discard the remaining marinade.
  • Preheat your outdoor grill to medium heat and lightly oil the grate.
  • Grill tenderloins on the preheated grill for 20-30 minutes, flipping once, until reaching your preferred level of doneness. Use an instant-read thermometer to ensure the center reaches at least 145°F (63°C).
