Fresh chopped veggies with a tangy olive oil and lemon dressing, topped with zesty feta before serving. Chill and enjoy!
Ingredients:
  • 4 large tomatoes, chopped
  • 1 green bell pepper, chopped
  • 1 cucumber, peeled and chopped
  • 1 red onion, chopped
  • 3 ounces crumbled feta cheese
  • 0.25 cup olive oil
  • 0.125 cup lemon juice
Instructions:
  • Combine the tomatoes, green bell pepper, cucumber, red onion, olive oil, and lemon juice in a large bowl. Chill in the refrigerator until cold. Serve topped with feta cheese.
