Green Bean Bundles

Green bean bundles topped with crispy Italian panko bread crumbs - a quick and delicious side dish ready in just 20 minutes.
Ingredients:
  • 1/4 cup Progresso™ Italian style panko crispy bread crumbs
  • Pinch gray salt
  • Freshly ground black pepper
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon freshly grated lemon peel
  • 1 tablespoon freshly grated Parmesan cheese
  • 1 teaspoon salt
  • 3/4 lb fresh green beans, trimmed
  • Unsalted butter for greasing baking dish
  • 2 tablespoons extra-virgin olive oil
  • Additional gray salt and freshly ground black pepper
  • 8 thin slices prosciutto
Instructions:
  • Preheat the oven to 400°F. Combine breadcrumbs, salt, and pepper in a small bowl. Mix in parsley, lemon zest, and cheese until well blended.
  • In a 3-quart saucepan, bring 4 cups of water and 1 teaspoon of salt to a boil. Add green beans and simmer for 5 to 6 minutes until crisp-tender, then drain.
  • Grease a baking dish with butter. Mix cooled green beans with 2 tablespoons of olive oil, season with salt and pepper. Divide the green beans into 4 equal portions. Lay 2 slices of prosciutto on a work surface, slightly overlapping each other. Place one portion of green beans on top and roll up the prosciutto carefully. Transfer to the baking dish. Repeat with the remaining prosciutto and green beans. Gently press down the tops of the bundles and sprinkle with toppings before baking.
  • Bake for around 10 minutes until golden and crispy. Serve right away.
