Elevate fresh green beans by blanching, pan-searing in bacon fat, and finishing with bacon, pepper, and vinegar for a flavorful side dish that pairs perfectly with chicken or steak.
Ingredients:
  • Black pepper
  • 1 pound fresh green beans, ends snipped off and discarded, extra long beans, cut in half if you want
  • Salt
  • 2-3 slices bacon
  • 1 tablespoon lemon juice, cider vinegar, or red wine vinegar
Instructions:
  • Blanch the green beans: Bring a pot of salted water to a vigorous boil (1 tablespoon salt for 2 quarts of water). Cook the green beans for 4-5 minutes until they are crisp-tender (adjust time based on your beans). Drain and reserve.
  • Cook the bacon in a large sauté pan over medium-low heat until crispy. Use a slotted spoon or fork to transfer the bacon to a plate lined with paper towels to absorb excess fat. Leave about 1 tablespoon of fat in the pan; discard any excess fat. If needed, add a bit of olive oil or butter to the pan.
  • Sizzle the green beans in the delicious bacon fat until they reach the perfect tenderness, then give them a quick high-heat finish for extra flavor.
  • Infuse with bacon flavor: Dice the bacon and mix with the green beans in the pan. Sauté for another minute.
