Elevate green beans with tangy Greek cheese and zesty vinaigrette for a vibrant side dish.
Ingredients:
  • 1 lb fresh green beans, trimmed
  • 2 tablespoons vegetable or olive oil
  • 1 tablespoon tarragon vinegar
  • 2 tablespoons chopped red onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic, finely chopped
  • 1/2 cup crumbled feta cheese (2 oz)
Instructions:
  • In a large 6-quart saucepan, bring the beans and 1 inch of water to a boil. Reduce the heat and simmer uncovered for 8 to 10 minutes until the beans are crisp-tender. Drain the beans before using.
  • Place beans in a large bowl. Add all the other ingredients, except for the feta cheese, and toss everything together until well coated.
  • Sprinkle generously with tangy feta cheese and serve while still warm.
