Elevate green beans with savory tomatoes, melted cheese, and crunchy almonds in just 20 minutes.
Ingredients:
  • 1 lb fresh green beans, trimmed
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
  • 1/8 teaspoon crushed red pepper flakes, if desired
  • 1/3 cup crumbled Cotija cheese
  • 1/4 cup sliced almonds
Instructions:
  • Place 2 cups of water in a Dutch oven and bring it to a boil with the lid on. Steam green beans in a basket inside the Dutch oven over medium-low heat for 8 to 10 minutes until they are crisp-tender. Drain the beans well before serving.
  • In a 10-inch skillet, heat oil over medium heat. Sauté the onion and garlic for 3 to 4 minutes until the onion is crisp-tender. Add tomatoes, oregano, and pepper flakes. Bring to a boil, then simmer uncovered for about 5 minutes until thickened and most of the liquid is evaporated, stirring occasionally.
  • Spread the drained beans on a serving platter, layer on the tomato mixture, and sprinkle with cheese and almonds. Serve warm.
