Creamy mashed potatoes with vibrant parsley and green onion purée.
Ingredients:
  • 2 pounds russet potatoes (about 3 large or 5 medium sized potatoes), peeled and cut into 2 inch chunks
  • Salt
  • 3 sprigs thyme (or a couple teaspoons dried thyme in a small boquet garni bag or tied up with cheesecloth)
  • 1 bunch fresh parsley, leaves chopped (about 1 cup)
  • 3 green onions (scallions), white and green parts chopped (about 1/2  cup)
  • 1/2 cup milk, divided
  • 1/4 cup cream
  • 3 tablespoons butter (more to taste)
  • 1 teaspoon freshly ground black pepper
Instructions:
  • Cook the potatoes: In a medium saucepan, combine peeled and cut potatoes, thyme, and cover with cold water. Stir in two teaspoons of salt. Bring to a boil, then lower the heat to simmer gently for 15 to 20 minutes until the potatoes are tender when pierced with a fork.
  • Blend parsley, green onions, 1/4 cup milk, and 1 teaspoon salt in a food processor until smooth while potatoes cook.
  • Drain the potatoes and transfer them to a large bowl. Remove and discard the thyme sprigs. In the same pot, heat the remaining milk, cream, and butter on low until the butter is melted.
  • Mash the cooked potatoes using a potato masher or potato ricer while the milk is heating. Be careful not to over mix to avoid a gluey texture.
  • Combine mashed potatoes with warm milk and cream in a pot. Stir in parsley purée. Turn off the heat and season with black pepper, extra salt if needed.
