Green shallot and prosciutto damper

Elevate classic damper bread with savory prosciutto and tangy parmesan.
Ingredients:
  • Melted butter, to lightly grease
  • 450g (3 cups) self-raising flour
  • 100g butter, finely chopped
  • 100g thinly sliced prosciutto, chopped
  • 45g (1/2 cup) shredded parmesan
  • 4 green shallots, ends trimmed, chopped
  • Pinch of salt
  • 185ml (3/4 cup) milk
  • Plain flour, to dust
Instructions:
  • Preheat oven to 200°C. Brush a baking tray with melted butter to lightly grease. Sift flour into a bowl, then rub in butter with fingertips until mixture resembles fine breadcrumbs.
  • Combine the prosciutto, parmesan, green shallot, salt, and milk using a round-bladed knife in a cutting motion until just combined.
  • Transfer the dough onto a lightly floured surface and gently knead until smooth. Form into an 18cm disc and place it on the prepared tray. Score the top into 8 wedges using a floured sharp knife.
  • Place in a hot oven for 30 minutes or until the bread sounds hollow when tapped on the bottom. Serve piping hot.
