Creamy goat cheese soup with wild rice, kale, and spinach for a hearty and comforting meal.
Ingredients:
  • 1 tablespoon olive oil
  • 2 large onions, chopped
  • 8 cups vegetable broth
  • 0.5 cup uncooked long-grain wild rice
  • 4 cloves garlic, minced
  • 1 pound fresh kale, chopped
  • 12 ounces fresh spinach, chopped
  • 2 ounces goat cheese, crumbled
  • salt and ground black pepper to taste
Instructions:
  • In a small frying pan over medium-high heat, heat olive oil. Cook and stir onions until translucent, about 5 minutes. Reduce heat to low and cook, stirring occasionally, until onions are very tender and dark brown, about 30 minutes.
  • In a pot over medium heat, pour the vegetable broth. Stir in rice and minced garlic, then add kale and spinach. If needed, add more broth. Add onions and let the greens wilt and rice cook fully for about 45 minutes.
  • Blend mixture with an immersion blender to desired consistency. Incorporate goat cheese for a creamy texture. Mix in lemon juice, salt, and pepper.
