Green Tea Layer Cake

Deliciously delicate green tea cake with a hint of sweetness and irresistible moisture.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 teaspoons powdered green tea
  • 1.25 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 1 cup plain yogurt
  • 1.5 teaspoons vanilla extract
  • 1.25 cups confectioners' sugar
  • 2 teaspoons powdered green tea
  • 2 tablespoons butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 1.5 teaspoons milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while you generously grease and flour two 8-inch round pans. Mix all-purpose flour, cake flour, baking soda, salt, and green tea powder in a sieve and set aside.
  • Combine sugar, oil, and eggs in a large bowl, beating until smooth. Mix in 1 1/2 teaspoons of vanilla. Alternate adding the flour mixture and yogurt, mixing until just combined. Pour batter into pans.
  • Place the cake in the preheated oven and bake for 30 to 40 minutes until a toothpick inserted in the center comes out clean. Allow the cake to cool on a wire rack for 30 minutes before removing it from the pans.
  • Combine confectioners' sugar and green tea powder in a sifter. In a medium bowl, mix the tea mixture with butter, cream cheese, vanilla, and milk. Beat with an electric mixer until smooth.
  • Once the cakes have thoroughly cooled, place one layer on a flat serving plate. Spread a delicate layer of frosting on top. Add the second cake layer and frost the top and sides. Optionally, sprinkle with green tea powder. Enjoy chilled or at room temperature.
