Tangy green tomato jam - summer's must-have spread for bagels, sandwiches, burgers, and cheese boards!
Ingredients:
  • 3 pounds green tomatoes, cored and cut into chunks
  • 2 tablespoons finely chopped fresh ginger
  • 3.75 cups white sugar
  • 3 tablespoons fresh lemon juice, divided
  • 2 tablespoons fresh orange juice
  • 2 teaspoons lemon zest
  • 2 teaspoons grated orange zest
  • 1 teaspoon kosher salt
Instructions:
  • Finely chop tomatoes and ginger in batches using a food processor until smooth, about 15 pulses per batch. Transfer the mixture to a large Dutch oven.
  • Combine the sugar, 2 tablespoons of lemon juice, orange juice, lemon zest, orange zest, and salt until fully mixed. Bring the mixture to a boil over medium-high heat, stirring occasionally. Use a candy thermometer attached to the side of the pan. Reduce heat to medium-low (maintain a low boil) and continue cooking with occasional stirring until the mixture reaches a temperature of 215-220 degrees F (101-105 degrees C), which should take 45 minutes to 1 hour.
  • Take the jam off the heat and swirl in the remaining 1 tablespoon of zesty lemon juice. Allow it to cool for 3 hours before serving or preserving.
