Grilled and marinated rabbit (Coniglio marinato alla griglia)

Infuse rabbit with robust flavor using smashed herbs for a smoky finish.
Ingredients:
  • 1.2 kg rabbit preferably wild, jointed
  • 1 handful fresh thyme and rosemary leaves picked
  • 4 cloves garlic peeled
  • olive oil
  • 1 lemon zest and juice of
  • 1 teaspoon honey
  • 4 thick slices higher-welfare pancetta
  • salt
  • freshly ground black pepper
Instructions:
  • Prepare rabbit marinade by combining thyme, rosemary, garlic, olive oil, lemon zest and juice, and honey. Coat rabbit pieces with marinade and let it sit at room temperature while you prepare the barbecue. Use fresh thyme sprigs as a brush to dab marinade on meat while cooking for added flavor. Season meat with salt and pepper. Skewer pancetta between belly pieces and cook legs, shoulder, belly, saddle, ribs, kidney, and liver until fully cooked, flipping occasionally and basting with marinade. Serve with choice of sides and enjoy with a glass of white wine.
