Grilled Antipasto Pizza

Grilled summer pizza to keep things sizzling outdoors.
Ingredients:
  • 1/4 lb small whole mushrooms (1 1/2 cups)
  • 1 medium yellow bell pepper, cut into 8 pieces
  • 1/4 cup Italian dressing
  • 1 package (14 oz) prebaked original Italian pizza crust (12 inch)
  • 1 cup shredded mozzarella cheese (4 oz)
  • 2 plum (Roma) tomatoes, thinly sliced
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 cup sliced ripe olives
Instructions:
  • Preheat gas or charcoal grill. Combine mushrooms, bell pepper, and 2 tablespoons of dressing in a medium bowl. Transfer vegetables to a grill basket or wok.
  • Heat grill over medium heat. Grill vegetables in a grill basket for 4 to 6 minutes, shaking occasionally, until bell pepper is crisp-tender. Coarsely chop vegetables after grilling.
  • Brush the pizza crust with the remaining 2 tablespoons of dressing. Sprinkle 1/2 cup of cheese on top. Arrange tomatoes over the cheese. Add grilled vegetables, onions, and olives, then finish with the remaining 1/2 cup of cheese.
  • Grill the pizza over medium heat, covered, for 8 to 10 minutes until the crust is crisp and the cheese is melted.
