Cheesy, bacon-topped grilled bison burgers on sweet Hawaiian buns for a satisfying meal.
Ingredients:
  • 12 slices bacon, cut in half
  • 1 pound ground bison
  • 1.5 tablespoons Worcestershire sauce
  • 1 teaspoon Himalayan pink salt
  • 1 teaspoon ground black pepper
  • 4 slices sharp Cheddar cheese
  • 4 Hawaiian-style hamburger buns
  • 4 teaspoons mayonnaise, or to taste
Instructions:
  • Preheat your outdoor grill to medium-high heat and give the grate a light coating of oil.
  • In a large skillet, sizzle bacon over medium-high heat, flipping occasionally, until perfectly crispy and golden, around 10 minutes. Afterwards, lay the bacon slices on paper towels to soak up the excess fat, and save the delicious bacon grease for later.
  • Combine bison, bread crumbs, egg, Worcestershire, salt, and pepper in a bowl until well mixed and slightly sticky. Form the mixture into 4 equal patties. Brush both sides of the patties with bacon grease to prevent sticking and enhance flavor before grilling.
  • Grill patties until golden brown on both sides, around 5 minutes each. Use an instant-read thermometer to ensure the center reaches 160°F (70°C). Top each patty with Cheddar slices and grill until melted, approximately 1 more minute. Transfer to a plate.
  • Toast the buns on the grill, sliced sides down for about 1 minute. Spread mayonnaise on the toasted buns, then add the burgers and bacon.
