Elevate boudin sausage with grilled onions, peppers, and mushrooms for a flavorful twist.
Ingredients:
  • 2 red bell peppers, cut into 2 inch pieces
  • 1 large red onion, sliced into petals
  • 4 ounces button mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • 4 links boudin sausage
  • 4 hot dog buns
  • 2 tablespoons spicy brown mustard
Instructions:
  • In a large bowl, mix bell peppers, onion, mushrooms, olive oil, and seafood seasoning until well combined. Let it sit as you preheat the grill.
  • Heat up your outdoor grill to medium-high heat and coat the grate lightly with oil.
  • Place the boudin directly on the grate and the vegetable mixture in a grill basket. Grill for 5 minutes. Flip the boudin and stir the vegetables. Continue grilling until the sausage reaches an internal temperature of 160 degrees F (71 degrees C), about another 5 minutes.
  • Fill the hot dog buns with boudin, add a dollop of mustard, and serve alongside fresh vegetables.
