Grilled Buffalo Shrimp Salad

Impress with tangy grilled shrimp for a crowd-pleasing dish.
Ingredients:
  • 2 lb uncooked deveined peeled large shrimp, tail shells removed
  • 1/2 cup buffalo wing sauce
  • 2 bags (10 oz each) torn mixed salad greens (such as romaine lettuce and radicchio)
  • 2 medium stalks celery, sliced (1 cup)
  • 1 1/2 cups seasoned croutons
  • 1 cup blue cheese dressing
Instructions:
  • Preheat gas or charcoal grill. Skewer shrimp on eight 12-inch metal skewers. Brush generously with wing sauce, making sure to coat all sides of the shrimp. Allow to marinate for 10 minutes.
  • Grill shrimp over medium heat until they turn pink, for about 5 to 7 minutes. Cover the grill for even cooking.
  • In a large bowl, combine salad greens, celery, croutons, and dressing, gently toss. Serve the salad on individual plates and top each with shrimp.
