Grilled Caesar flank steak sandwich: A guilt-free lunch sensation.
Ingredients:
  • 1/2 cup Boursin® light cheese with garlic and herbs (from 6.5-oz container)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon anchovy paste
  • 3/4 teaspoon Worcestershire sauce
  • 3/4 lb beef flank steak
  • 1 teaspoon salt-free garlic-pepper blend
  • 4 pieces (4 inch) French bread, cut in half lengthwise
  • Olive oil cooking spray
  • 1 heart romaine lettuce, cut in half lengthwise
  • 1/4 cup freshly shredded Parmesan cheese (1 oz)
Instructions:
  • Preheat gas or charcoal grill. Combine all dressing ingredients in a small bowl and set aside.
  • Season each side of the steak with a flavorful 1/2 teaspoon of garlic-pepper blend. Grill the steak over medium-high heat for roughly 12 minutes, flipping it once for a perfect medium doneness. Rest the steak on a cutting board, cover it with foil, and lower the grill heat to medium.
  • Drizzle cut sides of bread with olive oil cooking spray. Grill bread and lettuce, cut sides down. Grill until bread is toasted and lettuce has grill marks, about 1 to 2 minutes, until lettuce is slightly wilted. Slice lettuce crosswise into 1-inch strips, discarding the root end.
  • Slice the steak thinly against the grain. Spread 1 tablespoon of dressing on the cut sides of the bread bottoms and tops for each sandwich. Divide the steak slices evenly over the bread bottoms, add grilled lettuce, and sprinkle 1 tablespoon of Parmesan cheese on top. Finish by covering with the bread tops.
