Colorful cauliflower salad with carrots, onion, and olives for a vibrant and flavorful dish!
Ingredients:
  • 3 cups cauliflowerets
  • 1 cup baby-cut carrots, cut lengthwise in half
  • 1 small red onion, cut into thin wedges
  • 2 tablespoons olive or vegetable oil
  • 1/2 teaspoon garlic pepper
  • 1/4 cup sliced ripe olives
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Prepare your grill for direct heat by heating the coals or gas grill. Take an 18x18-inch piece of heavy-duty aluminum foil and generously spray it with cooking spray. Arrange cauliflowerets, carrots, and onion in the center of the foil. Drizzle with oil and sprinkle with garlic pepper and salt. Gently stir to combine all the ingredients.
  • Wrap the vegetables in foil, ensuring a tight seal with space for circulation and expansion.
  • Grill the foil packet over medium heat for 13 to 18 minutes until vegetables are tender. Transfer the packet to a serving platter, cut an X on top, and then unfold the foil to mix in olives and basil. Enjoy!
