Grilled cauliflower steaks: caramelized edges, smoky flavor.
Ingredients:
  • 0.25 cup olive oil
  • 0.5 teaspoon ground black pepper
  • 2 large heads cauliflower
  • 2 tablespoons truffle oil
  • 0.25 cup shredded Parmesan cheese
  • 2 tablespoons minced fresh parsley
Instructions:
  • Prepare the outdoor grill to medium-high heat and grease the grate lightly. Combine oil, salt, and black pepper in a bowl, whisking them together.
  • Prep the cauliflower by trimming off the tough bottom leaves, keeping the stem intact. Place the cauliflower heads on a cutting board, stem side up. Slice vertically on both sides of the stem to release the florets. Cut each cauliflower vertically through the stem into 2 "steaks," each 1 to 1 1/2 inches thick. Clear any remaining small leaves from the steaks and lay them out on a baking sheet.
  • Coat one side of the steaks with the fragrant oil blend.
  • Oil the grill and lay down the steaks. Grill for 5 minutes, then flip, brush with more oil, and continue grilling until golden and slightly charred, about 5 to 7 minutes. Transfer to a platter, drizzle with truffle oil, and finish with Parmesan cheese and parsley.
