Grilled chicken breasts marinated in Progresso™ broth, mustard, and garlic, served with a savory maple glaze made from the marinade.
Ingredients:
  • 4 boneless skinless chicken breasts
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 3 tablespoons olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 3 cloves garlic, finely chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons real maple syrup
  • Chopped fresh parsley for garnish, if desired
Instructions:
  • Place the chicken breasts in a convenient resealable plastic bag.
  • In a medium bowl, whisk together 1/2 cup of broth, oil, 2 tablespoons of Dijon mustard, lemon juice, garlic, salt, and pepper. Pour this flavorful mixture over the chicken in a bag, seal, and refrigerate for at least 1 hour, but no longer than 8 hours to marinate.
  • Preheat your grill. Take the chicken out of the marinade and pour the marinade into a saucepan. Whisk in 1/2 cup broth and maple syrup. Grill the chicken over medium heat, turning it once, until it reaches 165°F at the thickest part. While the chicken cooks, bring the sauce to a boil and simmer for 10 minutes until it thickens slightly. Remove from heat and stir in the remaining Dijon mustard.
  • Top the chicken breasts with the delicious sauce and sprinkle with fresh parsley before serving.
