Whip up a flavorful and easy chicken salad sandwich with celery, cranberries, cashews, spices, and creamy mayo. Perfect for a quick meal using leftover chicken or freshly cooked.
Ingredients:
  • 1 cup mayonnaise
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon celery salt
  • 4 cups chopped leftover grilled chicken
  • 2 celery stalks, sliced
  • 0.5 cup sweetened dried cranberries
  • 0.66666668653488 cup salted cashews
  • 8 slices bread, toasted
  • 4 tablespoons mayonnaise
  • 4 large red leaf lettuce leaves
  • 1 ripe tomato, sliced
Instructions:
  • In a mixing bowl, blend 1 cup of mayonnaise with pepper, garlic powder, and celery salt until smooth. Combine chicken, celery, cranberries, and cashews in a large bowl. Pour the creamy mixture over the ingredients and gently mix until well incorporated.
  • Spread a generous 1/2 tablespoon of creamy mayonnaise on every slice of golden toasted bread. Layer the scrumptious chicken salad evenly on four of the slices, then add a crisp lettuce leaf and fresh slice of tomato on top. Finish each delectable sandwich with the remaining slices of toast.
