Grilled Chicken Sandwiches

Juicy marinated grilled chicken between crispy pan-fried bread for a delicious summer sandwich.
Ingredients:
  • 2 skinless, boneless chicken breast halves
  • 0.25 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 lemon, juiced
  • 4 sprigs fresh dill, chopped
  • 1 tablespoon garlic and herb seasoning blend (such as Mrs. Dash®)
  • 1 teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon salt
  • 8 thick slices French bread
  • 2 tablespoons mayonnaise, or to taste
  • 4 slices tomato
  • 4 lettuce leaves
Instructions:
  • Heat up the grill until it reaches a medium-high temperature.
  • Using a fork, pierce the chicken breasts all over and transfer them to a large bowl. Combine 1/4 cup of olive oil, white wine vinegar, lemon juice, dill, garlic and herb seasoning, and black pepper in the bowl with the chicken. Mix well to ensure the chicken is evenly coated. Allow it to marinate for 10 minutes.
  • Discard the marinade and set the marinated chicken breasts aside.
  • Grill the chicken until fully cooked, about 10 to 15 minutes per side, reaching an internal temperature of 165°F (74°C). Rest the chicken on a cutting board for 5 minutes before slicing each breast in half.
  • In a skillet over medium-high heat, melt butter and olive oil. Sprinkle garlic powder and salt over the mixture. Add French bread slices, toasting until golden brown on one side, around 3 minutes, then remove from the pan.
  • To assemble the sandwich, start by placing 1 slice of toasted French bread onto a serving plate. Spread a layer of mayonnaise on the bread, then add a fresh tomato slice and season with salt and pepper. Next, layer on a grilled chicken breast half and a leaf of lettuce. Complete the sandwich by spreading mayonnaise on the untoasted side of another French bread slice and placing it on top.
