Cod fillet with spinach, tomato, mozzarella, and seasonings cooked in a foil packet for a flavorful 20-minute weeknight dinner.
Ingredients:
  • 1 (4 ounce) fillet cod
  • 1 pinch garlic powder, or to taste
  • 0.25 cup roughly chopped spinach, or to taste
  • 0.25 tomato, seeded and diced
  • 1 tablespoon chopped onion
  • 1 tablespoon olive oil, or to taste
  • 1 tablespoon balsamic vinegar, or to taste
  • 1 slice mozzarella cheese, cut into cubes
Instructions:
  • Fire up your outdoor grill to medium-high heat.
  • Lay cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Arrange spinach, tomato, and onion on top of the cod; season with more salt and black pepper. Drizzle olive oil and balsamic vinegar over everything and sprinkle with mozzarella cheese. Fold the foil over the cod to create a sealed packet by crimping the edges together.
  • Grill the fish until it easily flakes with a fork, around 7 to 9 minutes on preheated grill.
