Ingredients:
  • 8 slices Fruit and Nut Loaf
  • 4 fresh figs
  • Brown sugar, to sprinkle
  • 150g goat's cheese
  • Honey, to drizzle
  • Small fresh lemon thyme sprigs, to serve
Instructions:
  • Preheat the grill to medium-high. Line a baking tray with foil and toast the loaf slices under the grill until golden. Set aside.
  • Slice each fig into quarters and arrange them in a single layer on a tray. Sprinkle with brown sugar and grill for 3-4 minutes until golden.
  • Spread creamy goat's cheese generously on the toasts. Drizzle with a touch of golden honey and layer on sweet fig slices. Garnish with delicate lemon thyme sprigs for a burst of flavor.
