Grilled Five Spice Chicken

Exotic caramelized chicken marinated with Chinese 5-spice powder.
Ingredients:
  • 1 (5 pound) whole chicken, cut in half
  • 0.5 lime, juiced
  • 1 tablespoon fish sauce
  • 3 cloves garlic, crushed
  • 1 tablespoon seasoned rice vinegar
  • 1 tablespoon Chinese five-spice powder
  • 2 teaspoons hot chile paste (such as sambal oelek)
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon soy sauce
  • 0.33333334326744 cup seasoned rice vinegar
  • 1 teaspoon fish sauce
  • 1 teaspoon hot chile paste (such as sambal oelek)
Instructions:
  • Make small cuts, about 1/8 inch deep, in the skin of each piece of chicken 2 to 3 times.
  • Combine lime juice, fish sauce, garlic, rice vinegar, Chinese five-spice powder, hot chile paste, ginger, and soy sauce in a bowl. Transfer the flavorful mixture into a resealable plastic bag. Add chicken, ensuring it's well coated with the marinade, remove excess air, and seal the bag tightly. Refrigerate and marinate for 6 hours.
  • Preheat your outdoor grill to medium-high heat and lightly oil the grate.
  • Take the chicken halves out of the bag and place them on a plate or baking sheet lined with paper towels. Pat the chicken pieces dry with additional paper towels. Save the marinade mixture in a small bowl.
  • Combine the 1/3 cup rice vinegar, juice of 1/2 lime, 1 teaspoon fish sauce, and 1 teaspoon hot chile paste in a small bowl and whisk until well mixed. Let it rest.
  • Grill chicken skin-side down for 2 minutes. Flip, brush with reserved marinade, and move to indirect heat.
  • Brush the meat with glaze and grill, turning every 10-15 minutes, until well-browned and cooked through, about 45 minutes. Make sure the temperature reaches 180 degrees F (82 degrees C) near the bone using an instant-read thermometer.
  • Serve the chicken and drizzle with the vinegar lime juice mixture.
