Delicious rocket salad paired with flavorful spicy lamb - a nutritious family dinner serving four.
Ingredients:
  • 200g plain yoghurt
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2 garlic cloves, crushed
  • 1 lemon, rind finely grated, juiced
  • 62.50 ml chopped fresh mint
  • 62.50 ml chopped fresh coriander
  • Salt & ground black pepper, to taste
  • 12 lamb cutlets, trimmed
  • 1 bunch rocket, washed, dried, roughly shredded
  • 2 ripe tomatoes, halved, de-seeded, chopped
  • 1 red onion, chopped
  • 20.00 ml balsamic vinegar
  • 1/2 lemon, juiced
Instructions:
  • Mix together yoghurt, ground cumin, ground coriander, garlic, lemon zest, lemon juice, mint, fresh coriander, salt, and pepper in a large glass or ceramic dish. Add lamb cutlets and coat evenly with the marinade. Cover and refrigerate for 1 hour before cooking.
  • Mix the rocket, tomatoes, and red onion in a bowl. In a screw-top jar, combine olive oil, balsamic vinegar, lemon juice, salt, and pepper. Shake well. Pour the dressing over the rocket mixture and toss to combine.
  • Heat up the grill to medium heat.
  • Grill lamb cutlets for 3-5 minutes on each side until desired doneness. Serve with rocket salad.
