Delicious grilled vegetable pita pizza - quick and simple!
Ingredients:
  • 1 pita bread round
  • 1/4 red bell pepper
  • 1/8 small red onion
  • 2 1/4 teaspoons Italian dressing
  • 1/2 teaspoon olive oil
  • 2 tablespoons pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon chopped, black olives, drained
  • 1/8 cup sliced mushrooms
Instructions:
  • Preheat the grill over medium-high heat, lightly oil the grate, and preheat the oven to 425°F (220°C).
  • Combine bell pepper and red onion with zesty Italian dressing in a bowl. Grill the vegetables until perfectly tender, about 5 to 8 minutes, remember to turn them occasionally. Let them cool for a bit, then slice the peppers into thin strips and dice the onions into 3/4-inch pieces.
  • Grill the pita until it has satisfying grill marks on both sides, about 30 seconds to 2 minutes per side.
  • Lay the pita on a sheet pan. Brush one side of the pita with a blend of olive oil and pizza sauce. Top with peppers, onion, mushrooms, black olives, and a generous sprinkle of mozzarella cheese.
  • Bake in the hot oven until the cheese is gooey and melted, approximately 5 minutes.
