Grilled Pork Kabobs

Try this quick and tasty grilled pork chop and veggie dish marinated in apricot preserves and vinegar, served over rice. Ready in 30 minutes!
Ingredients:
  • 4 (1/2 to 3/4-inch-thick) boneless pork loin chops (1 lb.), trimmed of fat
  • 1/2 teaspoon seasoned salt or dried pork seasoning
  • 2 small zucchini, cut into 12 (1-inch) pieces
  • 8 medium mushrooms
  • 1 medium red bell pepper, cut into 12 pieces
  • 1/2 cup apricot preserves
  • 1 tablespoon cider vinegar
Instructions:
  • Prepare the grill by heating it up. Season both sides of the pork chops with seasoned salt, then cut each chop into 4 pieces. Thread the pork pieces, zucchini, mushrooms, and bell pepper onto four metal skewers. In a small bowl, mix the preserves and vinegar until well blended.
  • Once the grill is hot, place the kabobs on medium heat, either on a gas grill or charcoal grill. Brush them with the preserves mixture and cook for 5 minutes. Then, flip the kabobs, brush them with the remaining preserves mixture, and continue cooking for another 5 to 7 minutes until the pork is fully cooked. Optionally, serve over steaming hot cooked rice.
