Effortless Monday night meal.
Ingredients:
  • 40.00 ml red wine vinegar
  • 5.00 gm ground cumin
  • 1/2 tsp cayenne pepper or chilli powder
  • 4 x 160g lean pork medallion steaks
  • 1 avocado, chopped
  • 400g can black beans or red kidney beans, rinsed, drained (see note)
  • 1 large tomato, seeds removed, chopped
  • Large pinch cayenne or chilli powder
  • 1 lime, skin and white pith removed, flesh chopped
  • 125.00 ml coriander leaves
  • 18.40 gm rice bran oil or sunfl ower oil
Instructions:
  • In a bowl, mix vinegar, cumin, cayenne or chili powder, sea salt, and freshly ground black pepper. Add pork and toss to coat.
  • In a generously oiled large frypan over medium-high heat, sear the pork for 3-4 minutes on each side until desired doneness. Rest the pork, covered, off the heat for 5 minutes before serving.
  • Gently combine all the salad ingredients in a large bowl. Serve the pork steaks topped with the bean salad.
