Grilled herb-seasoned potato wedges with olive oil, no foil needed.
Ingredients:
  • 2 pounds russet potatoes
  • 0.5 cup olive oil
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh Greek oregano
  • 2 tablespoons chopped fresh parsley
  • 1 serving cooking spray
Instructions:
  • Prepare the potatoes by scrubbing them clean and cutting them into 2-inch wedges lengthwise.
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Lower the heat to medium-low and gently simmer until the potatoes are tender but slightly firm, for about 10 to 15 minutes. Drain the potatoes.
  • Combine olive oil, chives, oregano, and parsley in a spacious dish. Coat potatoes by tossing them in the oil mixture.
  • Heat up the outdoor grill until it reaches a medium-high temperature, then spray the grate with cooking spray.
  • Place potatoes on the hot grill and cook until lightly golden, about 7 to 10 minutes. Flip potatoes, increase heat to high, and grill for another 5 minutes. Season the oil and herb mixture with salt, then toss grilled potatoes in it before serving.
