Quick and flavorful grilled rockfish sandwiches with beer and mustard marinade. Perfect for a simple and satisfying dinner.
Ingredients:
  • 4 tablespoons light beer
  • 4 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon pepper seasoning
  • 4 (6 ounce) rockfish filets
  • 4 hamburger buns
  • 4 leaves romaine lettuce
  • 4 slices tomato
  • 4 tablespoons mayonnaise
Instructions:
  • Combine beer, Dijon mustard, garlic powder, and lemon pepper seasoning in a bowl, then transfer the mixture to a resealable plastic bag.
  • Place the rockfish filets in the marinade, ensuring they are fully coated. Remove any excess air from the bag and seal it tightly. Refrigerate and marinate for 30 minutes.
  • Preheat a sizzling outdoor grill to medium-high heat and lightly grease the grate.
  • Grill rockfish on the preheated grill until filets are fork-tender, for approximately 4 minutes per side. Toast hamburger buns on the grill until nicely marked, around 2 minutes.
  • Spread the mayonnaise onto the toasted hamburger buns. Then place a cooked rockfish portion, a tomato slice, and a lettuce leaf on each bun.
