Spicy chipotle mayo with adobo, cilantro, lime juice elevates grilled salmon sandwiches.
Ingredients:
  • Vegetable or canola oil
  • 2 center-cut salmon fillets (5 oz each), skinned
  • 2 tablespoons blue agave nectar or honey
  • Salt and pepper
  • 1 cup arugula
  • 2 ciabatta or kaiser rolls, split
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon adobo sauce
  • 1/4 cup fresh cilantro leaves
  • 1 cup mayonnaise
  • 2 tablespoons fresh lime juice
Instructions:
  • Place chipotle pepper, adobo sauce, and cilantro in a food processor. Pulse in short bursts until cilantro is roughly chopped.
  • Combine creamy mayonnaise with tangy lime juice in a food processor, pulsing until smooth. Season with salt and pepper to your liking. Enjoy immediately or chill until serving time.
