Grilled salmon appetizers with a portable, bite-sized, Asian-inspired twist make entertaining a breeze.
Ingredients:
  • 2 tablespoons soy sauce
  • 2 teaspoons white wine vinegar
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon grated gingerroot
  • 1/2 pound salmon fillet
  • 1/2 cup wasabi mayonnaise (from 11-ounce bottle)
  • 16 round wheat crackers
  • 1 medium green onion, thinly sliced (1 tablespoon)
Instructions:
  • Prepare your grill for direct heat by heating coals or setting up the gas grill. Combine soy sauce, vinegar, oil, and gingerroot in a small shallow container. Place the salmon in the mixture, skin side up, and marinate for 10 minutes.
  • Grill the salmon, skin side down, over medium heat for 10 to 12 minutes, situated 4 to 6 inches away from the heat source. Brush the salmon once with the marinade while cooking until it flakes easily with a fork.
  • Spread a layer of creamy mayonnaise on crispy crackers. Top each cracker with approximately 1 tablespoon of tender flaked salmon, a dollop of more mayonnaise, and a sprinkle of fresh green onions for a burst of flavor.
