Grilled Sausage and Potato Foil Packs

40-minute honey-mustard kielbasa and grilled veggies - a delicious family dinner!
Ingredients:
  • 3 cups frozen potatoes O'Brien with onions and peppers (from 24-oz bag)
  • 3/4 cup honey-mustard dressing
  • 2 cups frozen mixed vegetables (from 1-lb bag)
  • 1 lb ring cooked kielbasa or Polish sausage, cut into 4 pieces
Instructions:
  • Preheat a gas or charcoal grill. Cut four (18x12-inch) sheets of heavy-duty foil and coat with cooking spray. Arrange 1/4 of potatoes and vegetables next to each other in the center of each sheet. Drizzle 2 tablespoons of dressing over each portion.
  • Cut along the perimeter of each kielbasa slice at 1/2-inch intervals without cutting all the way through. Arrange the fanned-out kielbasa over the potatoes and veggies. Drizzle each with 1 tablespoon of the remaining dressing.
  • Place 2 sides of foil together, creating a tight 1/2-inch fold. Repeat the fold, leaving room for heat circulation. Fold the remaining sides to seal the packet. Refrigerate for up to 24 hours if desired.
  • Arrange the packets seam side up on the grill. Cover and cook over medium heat for 20 to 30 minutes, making sure to rearrange them a few times until the potatoes and vegetables are tender.
  • Cut a large X on the top of each packet and gently fold back the foil to release the steam.
