Elevate your fish dish with zesty citrus-olive butter.
Ingredients:
  • 2 tablespoons butter or margarine, softened
  • 1 tablespoon finely chopped kalamata olives
  • 2 teaspoons chopped fresh parsley
  • 1/2 teaspoon balsamic vinegar
  • 1/4 teaspoon grated orange peel
  • 1 sea bass fillet, about 1 inch thick (1 lb)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
Instructions:
  • Combine the ingredients for the Citrus-Olive Butter in a small bowl and chill in the refrigerator for about 30 minutes until firm.
  • Preheat the grill. Brush oil on both sides of the fish fillet and season with salt and pepper.
  • Grill the fish over medium heat, covering it, and cook for 10 to 13 minutes, flipping it after 5 minutes, until it easily flakes with a fork. Serve with Citrus-Olive Butter.
