Grilled scallop and shiitake skewers - marinade, grill, enjoy in minutes!
Ingredients:
  • 7 ounces shiitake mushrooms, stems removed
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon lemon juice
  • 1 pound sea scallops, patted dry
  • 2 teaspoons Italian seasoning
  • 8 wooden skewers
Instructions:
  • In a bowl, combine mushrooms with soy sauce, olive oil, and lemon juice. Mix well to evenly coat the mushrooms.
  • Combine scallops with a tantalizing mixture of olive oil, lemon juice, garlic, and Italian seasoning in a bowl, and toss to coat evenly.
  • Soak wooden skewers in water while mushrooms and scallops marinate for 30 minutes to enhance the flavors and prevent them from burning during cooking.
  • 1. Preheat your outdoor grill to medium-high heat and brush the grate with a light coating of oil. Skewer the mushrooms and scallops separately. Grill until the mushrooms are tender and the scallops are opaque, which should take about 3 minutes per side. If necessary, grill the mushrooms for an additional 1 to 2 minutes. Serve promptly.
