Transform traditional crab salad into a summery delight by replacing crab with smoky grilled shrimp. Prepare the dressing in advance for a chilled twist, as the shrimp cook quickly.
Ingredients:
  • 1 cup mayonnaise
  • 0.33333334326744 cup ketchup
  • 0.25 cup creme fraiche
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon packed brown sugar
  • 1 teaspoon paprika
  • 0.25 teaspoon kosher salt, or to taste
  • 0.125 teaspoon cayenne pepper
  • 0.5 teaspoon Worcestershire sauce
  • 2 tablespoons minced green onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon olive oil
  • 0.5 lemon, juiced
  • 2 pounds uncooked medium shrimp - peeled and deveined, tails left intact
  • 1 teaspoon kosher salt
  • 0.25 teaspoon smoked paprika
  • 1 heart of romaine lettuce, chopped
  • 8 cherry tomatoes, halved
  • 1 avocado - peeled, pitted, and thinly sliced
  • 4 hard-boiled eggs, halved
Instructions:
  • In a bowl, combine mayonnaise, ketchup, creme fraiche, 1 tbsp lemon juice, cider vinegar, brown sugar, paprika, salt, cayenne pepper, Worcestershire sauce, green onion, and parsley. Whisk until smooth. Chill in the fridge for 2 to 3 hours before serving.
  • Coat the shrimp with olive oil and juice from half a lemon before grilling. Season with salt and smoked paprika, then gently toss until evenly coated.
  • Preheat your outdoor grill on high heat and brush the grate lightly with oil.
  • Grill the shrimp over hot coals until they turn pink and the flesh is opaque, about 2 minutes per side. Transfer to a dish and chill in the refrigerator for about 30 minutes. Feel free to remove or keep the shrimp tails on as you prefer.
  • In individual serving bowls, layer romaine lettuce, cherry tomatoes, avocado slices, and egg halves. Season with salt and pepper. Pour 1/4 to 1/2 cup dressing over the vegetables. Add shrimp and green onions on top. Drizzle more dressing over the shrimp, if desired.
